Ingredients:

Fresh lemons

Salt

Red chili powder

Turmeric powder

Mustard seeds

Fenugreek seeds

Asafoetida (Hing)

Edible oil (preferably sesame or mustard oil)

Optional spices (cumin seeds, chili flakes)
Preparation:

Wash and sun-dry fresh lemons, then cut them into small pieces.

Mix lemon pieces with salt, turmeric, and red chili powder.

Roast mustard and fenugreek seeds, then grind coarsely and add to the mixture.

Heat oil with a pinch of asafoetida and pour over the lemon-spice mixture.

Mix well and store in a clean, dry jar.

Allow the pickle to mature for 1–2 weeks for the flavors to blend perfectly.
